if they're really Mac people then Mail is fine, if they're less Mac and/or need more Exchange functionality I'd go Entourage 2008 with Web Services. For Exchange 2007 it's more up to the client. For Exchange 2003 my recommendation is Entrourage 2008 (non-Web Services) if they need business class Exchange features. I support a variety of clients with both Exchange 20 Servers and various iterations of Mac software. Note: If you have a version of Mail that does not support Exchange.
